December’s Flavor of the Month is Pesto!  

Derived from the Genoese verb pestâ, which means “to crush,” pesto is a sauce that traditionally consists of crushed garlic, pine nuts, coarse salt, basil leaves, olive oil, and hard cheese such as Parmesan or Pecorino Sardo. Pesto’s origins are found in Genoa, the capital city of Liguria, Italy. This popular flavor has expanded its reach across the globe and can be added to countless applications to enhance their flavor.  

Trilogy’s pesto flavor consists predominantly of fresh basil and garlic essential oils as well as sharp parmesan natural flavor, which makes it clean label friendly. The flavor is a delicious addition to olive oil because it provides consumers with the pop flavor they are looking for. Only 30% of US consumers who use butter, margarine, or oil, say that olive oil is useful for flavoring food (Mintel). There is an opportunity for brands to differentiate their olive oil by using Trilogy’s flavors specifically developed for olive oil. With many consumers looking for creative ways to enhance the dishes they cook from home, there is a need for brands to add consumer preferred flavors to household staples.
